Sunday Morning Breakfast Calling

Sunday morning aka my favorite time of the week and the most important meal of the day!! It’s the one-day in my house where everyone’s off and no one needs to get up to do all the things during the week you don’t really want to do. Sunday morning breakfast has become slightly like a Christmas tradition … minus the presents… and the tree, so basically its not really like Christmas at all but it is a weekly event where you make just slightly more effort and a indulge in a little more TLC. It’s the day where you do what you want to do and make yourself happy, I mean if you want to do that face mask you do it, If you want to finish that book you never get round to it’s the day you can spend a little more time in bed and finish it. But first all good Sunday mornings come with a great breakfast, with that extra time in the morning you get to indulge in those cravings that have been haunting you all week, breakfast can be anything you want it to be really (this coming from a person who once had cheesecake for breakfast #cheesecakelife). 


My main breakfast go to’s on a Sunday 

°      Overnight Oats- love the peanut butter, also really easy to make the night before for an extra relaxing morning 
°      Avocado Toast – especially on sourdough or with some scrambled egg 
°      Granola – usually homemade, really easy to do and you can keep it for the rest of the week too 
°      Porridge – caramelized banana and walnuts 
°      Baked eggs – just yes 
°      Acai bowl – literally throw any fruit in there you’ve got, extra nice with cherries and some almond extract 
°      French toast – who doesn’t love French toast 
°      Donuts – usually after a trip to crosstown 
°      Pastries – classic 
°      Bagels – always trying to recreate Yeastie boy’s and Black seed 
°      Waffles- not my go to when you have to make them yourself but still sooo good 
°      Banana loaf – the best creation in the world 

Last but not least my favorite treat of them all and yes they do take time to make but they never disappoint pancakes, make them anyway you like vegan non-vegan still amazing and my friends can vouch for me and tell you I do make some pretty good pancakes. So of course they were my go to choice this week, well… mainly my sisters but Hey I’m not complaining. Usually my go to recipe is the Jamie Oliver American style pancakes that you just put anything into, chocolate chips, fruit anything you want.  But this week we chose to go for a slightly different vegan option from Livia’s kitchen, and they were so good trust me.  We did adapt the recipe a little because it does say to use orange and we didn’t but even without still a good recipe. 10/10 would recommend. 

Ingredients:

°      2 tsp coconut oil (melted)
°      100g gluten free oat flour (or blended oats) (1 + 1/2 cups)
°      150ml dairy free milk (1 + 1/2 cups)
°      1 tbsp maple syrup
°      Raw dark chocolate, chopped 

Sauce:

°      Dark chocolate 
°      Coconut cream 

Pancake:

·      Set your hob onto a medium heat with a non-stick pan.
·      Combine the oat flour, milk into a large mixing bowl until a smooth batter forms. Add in the melted coconut oil and mix until well combined.
·      Add maple syrup and taste to make sure it is sweet enough. Now add chocolate chunks and mix well.
·      Spoon a quarter of the batter into the ready heated pan. Flip the pancake once it starts to look golden and some air bubbles have formed.

Sauce: 
°      Heat the cream in the microwave for 3 minutes and then add the chocolate and strip until you have a vegan chocolate ganache.
